Empty Your Fridge and Cupboard Couscous

This recipe came to me as I was trying to decide how to feed my empty belly on a night when all I wanted to do was go to bed and not cook another thing. I found all the ingredients for this recipe sitting in my fridge or cupboard and was able to satisfy my hunger in a healthy, feel good way. It is worth a try!

EMPTY YOUR FRIDGE AND CUPBOARD COUSCOUS

Serves: 4
Ingredients
  • 2 cups cooked couscous
  • 1 cup roasted baby tomatoes and its juices (made from wrinkled tomatoes in the veggie drawer)
  • ¼ cup cooked chickpeas (little green fuzzy beards were about to grow)
  • 1 tablespoon fresh basil, chopped (pesto is also good)
  • 1 teaspoon lemon juice
  • 1-2 tablespoons soft crumbled goat cheese
  • Salt and pepper to taste
  • Balsamic reduction
Instructions
  1. (add any other cooked vegetables that might be lying around the fridge such as roasted red peppers, arugula, asparagus, roasted eggplant.)
  2. In a medium bowl mix together all the ingredients except for the goat cheese.
  3. Before serving, add goat cheese and gently fold into couscous mixture.
  4. For added flavor, drizzle the couscous with a little balsamic reduction.
  5. For the “hungry man” version, pick up a cooked rotisserie chicken from your local
  6. Grocery store (free-range is best).
