When I first moved to South Africa, I went out and bought myself a stick blender because I could not live without it. Leftover vegetables are easily transformed into flavourful soups, excess fresh herbs magically change into inventive pestos, frozen fruits into refreshing smoothies and various oils and vinegars emulsify into tasty salad dressings.
Having a mixing bowl as an attachment is a must since that is how I make most of my dressings for salads, fish and even meats.
