Vegetarian samosas turn out to be a surprisingly healthy snack

I am on the path of discovery for the best samosas or samoooosa (local dialect) in town. Before heading out the door, I thought I should try my luck at making my own since my fridge is full of vegetables that need to be eaten. It is also a good way to hide vegetables from a meat-eater, who loves appetizers.

I decided to try my hand at making a dough out of flour, salt, oil and water. Much to my surprise, it turned out really well and it did not have the flavour or consistency of play dough. Let me know what you think of these healthy little treats.

[i]Samosas have become part of my diet since moving to South Africa. I love to fill them with whatever I can find in the fridge.[/i]
Ingredients
  • [br][b]Pastry:[/b]
  • 1 cup plain flour
  • 2 tbsp vegetable oil
  • ½ tsp salt
  • 1/3 cup water + 1 tbsp water at end to create a firm dough[br][b]Filling:[/b]
  • 1/2 medium onion, chopped
  • 2 tbsp vegetable oil
  • ½ tbsp ground coriander
  • ½ tbsp ground cumin
  • 1 tsp garam masala
  • ½ tsp chili powder
  • 1 tsp turmeric
  • ½ tsp cinnamon
  • ½ cup medium carrot, finely diced
  • ½ cup small potato, finely diced
  • ½ cup broccoli florets, chopped
  • ½ cup cauliflower florets, chopped
  • ½ cup cabbage, shredded and chopped
  • 1 tbsp coriander, chopped
  • ½ C water
  • Sauté onions in oil.
  • Add spices and continue frying
  • Add vegetables and continue frying
  • Add water and let mixture cook for 5-8 minutes until vegetables are cooked. Add 1 tbsp at a time of water if mixture gets too dry

  • On a floured surface, flatten balls and roll out into round disks

  • Place a tbsp of mixture on each disk
  • Fold over to create a half moon. Seal edges with a little water and a fork

  • Rather than frying in oil, use egg wash and sesame seeds, bake in oven at 375F (180C) for 15 minutes or until golden brown
Instructions
  1. [br][b]Parstry:[/b]
  2. Mix flour and salt together then add vegetable oil while mixing with your fingertips
  3. Slowly add water to make a dough. Add extra water to create a firm dough.
  4. Knead for 5 minutes.
  5. Divide into small balls, brush with oil and cover until ready to use.[br][b]Filling:[/b]
  6. Sauté onions in oil.
  7. Add spices and continue frying
  8. Add vegetables and continue frying

Final product

The traditional way of cooking samosas is to fry them in oil but I hate the smell as well as the grease! Try it the healthy way, it is surprisingly yummy.
