You might think I am ridiculous coveting a mini muffin tin but for years I have been making bite-sized muffins for breakfast treats, snacks and even hors d’oeuvres. They produce just the right size morsel to fit into most mouths. I often find leftover vegetables in the fridge or garden to invent into quinoa cakes or mini baked fritters.
